Date Syrup Crepes
INGREDIENTS:

1 cup all-purpose flour

2 large eggs

1 1/4 cups milk (or almond milk for a dairy-free option)

2 tbsp melted butter (or neutral oil)

1 tbsp sugar

1/4 tsp salt

1/2 tsp vanilla extract

8 oz mascarpone cheese (or cream cheese as an alternative)

3 tbsp Cali Date Syrup

1/2 tsp vanilla extract
-
1/4 tsp cinnamon
-
1/4 cup granulated sugar
-
1 tsp cinnamon
-
Optional: Fresh fruit (e.g., berries or sliced bananas)
INSTRUCTIONS:

Blend flour, eggs, milk, melted butter, sugar, salt, and vanilla until smooth; rest batter 20–30 minstrels.

Heat a greased skillet over medium heat.

Pour 1/4 cup batter, swirl to coat evenly, and cook 1–2 mins until golden.

Flip, cook 30 secs more. Repeat with remaining batter.

Beat mascarpone, Cali Date Syrup, vanilla, and cinnamon until smooth.

Adjust sweetness if needed.

Spread 1–2 tbsp filling on half a crepe.

Fold in half, then into a triangle (or roll up).

Mix sugar and cinnamon; sprinkle over crepes.

Drizzle with Cali Date Syrup.
