Date Syrup Crepes

INGREDIENTS:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 1/4 cups milk (or almond milk for a dairy-free option)

  • 2 tbsp melted butter (or neutral oil)

  • 1 tbsp sugar

  • 1/4 tsp salt

  • 1/2 tsp vanilla extract

  • 8 oz mascarpone cheese (or cream cheese as an alternative)

  • 3 tbsp Cali Date Syrup

  • 1/2 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 1/4 cup granulated sugar

  • 1 tsp cinnamon

  • Optional: Fresh fruit (e.g., berries or sliced bananas)

INSTRUCTIONS:

  • Blend flour, eggs, milk, melted butter, sugar, salt, and vanilla until smooth; rest batter 20–30 minstrels.

  • Heat a greased skillet over medium heat.

  • Pour 1/4 cup batter, swirl to coat evenly, and cook 1–2 mins until golden.

  • Flip, cook 30 secs more. Repeat with remaining batter.

  • Beat mascarpone, Cali Date Syrup, vanilla, and cinnamon until smooth.

  • Adjust sweetness if needed.

  • Spread 1–2 tbsp filling on half a crepe.

  • Fold in half, then into a triangle (or roll up).

  • Mix sugar and cinnamon; sprinkle over crepes.

  • Drizzle with Cali Date Syrup.

  • Garnish with fruit, whipped cream, or powdered sugar. Enjoy!
