Ancient Arabian Date and Lamb Stew

INGREDIENTS:

  • 1 lb lamb stew meat, cut into chunks

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 cup pitted dates, chopped

  • 2 tbsp Cali Date Syrup

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground cinnamon

  • Salt and pepper to taste

  • 3 cups lamb or vegetable broth

  • Fresh cilantro for garnish (optional)

INSTRUCTIONS:

  • Heat olive oil in a large pot over medium heat. Brown the lamb for 5–7 minutes, then add onion and garlic, sautéing until softened. Stir in cumin, coriander, cinnamon, salt, and pepper, cooking for a minute to toast the spices.

  • Pour in broth to deglaze the pot, then add chopped dates and Cali Date Syrup. Bring to a simmer, reduce heat, and cook covered for 1–1.5 hours until the lamb is tender and flavors meld.

  • Serve in bowls, garnished with fresh cilantro if desired. Pair with flatbread or rice and enjoy the sweet-savory harmony of this ancient-inspired dish.
