




Mediterranean Cucumber-Tomato Salad with Date-Pomegranate Dressing
INGREDIENTS:

Chopped cucumber

Cherry tomatoes, halved

Sliced Kalamata olives

Chopped fresh mint and parsley

Crumbled goat cheese

Pomegranate seeds
-
2 tbsp Cali Date Syrup

2 tbsp pomegranate molasses
-
3 tbsp olive oil
-
1 tbsp lemon juice
-
1/2 tsp ground sumac (optional, for tanginess)

Salt and pepper to taste
INSTRUCTIONS:

Combine cucumber, cherry tomatoes, olives, mint, and parsley in a salad bowl.

Whisk Cali Date Syrup, pomegranate molasses, olive oil, lemon juice, sumac, salt, and pepper in a small bowl.

Pour dressing over the salad and toss gently.

Top with crumbled goat cheese and pomegranate seeds.

Toss lightly if desired, then transfer to a serving dish.

Serve immediately or let sit for 10 minutes.
