Mediterranean Cucumber-Tomato Salad with Date-Pomegranate Dressing

INGREDIENTS:

  • Chopped cucumber

  • Cherry tomatoes, halved

  • Sliced Kalamata olives

  • Chopped fresh mint and parsley

  • Crumbled goat cheese

  • Pomegranate seeds

  • 2 tbsp Cali Date Syrup

  • 2 tbsp pomegranate molasses

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 1/2 tsp ground sumac (optional, for tanginess)

  • Salt and pepper to taste

INSTRUCTIONS:

  • Combine cucumber, cherry tomatoes, olives, mint, and parsley in a salad bowl.

  • Whisk Cali Date Syrup, pomegranate molasses, olive oil, lemon juice, sumac, salt, and pepper in a small bowl.

  • Pour dressing over the salad and toss gently.

  • Top with crumbled goat cheese and pomegranate seeds.

  • Toss lightly if desired, then transfer to a serving dish.

  • Serve immediately or let sit for 10 minutes.

  • Add arugula or baby spinach for freshness.

  • Adjust dressing to taste.

  • Pair with warm pita or grilled chicken/fish.
