Roasted Veggie Salad with Cali Date Syrup Balsamic Splash

INGREDIENTS:

  • 2 cups mixed greens

  • 1 onion, sliced

  • 1 zucchini, sliced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 2 tbsp Cali Date Syrup

  • 1 tbsp balsamic vinegar

  • Crumbled feta or goat cheese

INSTRUCTIONS:

  • Preheat oven to 400°F (200°C).

  • Toss the onion, and zucchini with olive oil, salt, and pepper.

  • Roast for 20-25 minutes until tender.

  • In a small bowl, whisk together Cali Date Syrup and balsamic vinegar.

  • Toss roasted veggies with mixed greens.

  • Drizzle with the Cali Date Syrup balsamic dressing, and top with crumbled cheese.

  • Serve as a light, flavorful salad!
