Roasted Veggie Salad with Cali Date Syrup Balsamic Splash
INGREDIENTS:

2 cups mixed greens
-
1 onion, sliced
-
1 zucchini, sliced
-
1 tbsp olive oil
-
Salt and pepper, to taste
-
2 tbsp Cali Date Syrup
-
1 tbsp balsamic vinegar
-
Crumbled feta or goat cheese
INSTRUCTIONS:

Preheat oven to 400°F (200°C).
-
Toss the onion, and zucchini with olive oil, salt, and pepper.
-
Roast for 20-25 minutes until tender.
-
In a small bowl, whisk together Cali Date Syrup and balsamic vinegar.
-
Toss roasted veggies with mixed greens.
-
Drizzle with the Cali Date Syrup balsamic dressing, and top with crumbled cheese.
-
Serve as a light, flavorful salad!
