Ancient Date Syrup and Almond Cake
INGREDIENTS:

1 cup ground almonds (or almond flour)

1/2 cup Cali Date Syrup
-
3 eggs
-
1/4 cup olive oil
-
1 tsp ground cinnamon
-
1/4 tsp ground cardamom
-
A pinch of salt
-
1 tsp baking powder
-
1/4 cup chopped pistachios or walnuts (optional)
INSTRUCTIONS:
-
Preheat oven to 350°F (175°C) and grease a small cake pan.

Whisk eggs, Cali Date Syrup, and olive oil in a bowl until smooth.

Add ground almonds, cinnamon, cardamom, salt, and baking powder; mix well.

Pour into the pan, smooth the top, and optionally sprinkle with pistachios or walnuts.

Bake for 30-35 minutes or until a toothpick comes out clean.
-
Cool before slicing.
